Ingredients

  • 2 boneless chicken breasts
  • 4 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 tomato, chopped
  • ½ cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Making Process – Step-by-Step

Step 1: Preparing and Cooking the Chicken

Begin by seasoning the chicken breasts with salt, black pepper, and 1 tablespoon olive oil. Heat a grill pan over medium heat and place the chicken on it. Cook the chicken for about 6–7 minutes on each side until fully cooked and golden brown. Once cooked, remove from heat and allow it to rest for a few minutes before slicing. This helps keep the chicken juicy.


Step 2: Preparing the Salad Base

In a large bowl, add the mixed salad greens, cucumber slices, chopped tomato, and cherry tomatoes. Toss gently to combine. These fresh vegetables provide vitamins and fiber.


Step 3: Adding the Chicken and Dressing

Place the sliced grilled chicken on top of the salad. Drizzle olive oil and lemon juice over the salad. Toss lightly so everything is coated evenly.


Step 4: Serving

Serve immediately while fresh. This healthy lunch is light, nutritious, and filling.
